This course wants to provide a full immersion experience into the Italian cuisine, which is characterized by its simplicity and relies mainly on the quality of the ingredients, rather than on elaborate preparation. Participants will conduct tasting sessions, field trips, cooking classes by experienced Italian chefs and food designers.They will also understand the familiar ownership of Italian companies and chains in the sector, and how the unconventional structure of many Italian food establishments can be a competitive success factor when shifting to international markets and adapting to the new emerging global food trends. Impact of social media and digital image management in the new
era of open innovation will be explored through the analysis of specific case studies of the Italian food and restaurant business.

1- understand the link between entrepreneurial art and entrepreneurial science in the Italian food and catering
industry.
2- recognize and evaluate entrepreneurial opportunities and new business models in the food and catering.
3- understand the value drivers which make exclusive the customers’ experience of the Made in Italy food and catering industry.

This course requires 42 contact hours. It can be completed in short intensive formats of 2-4 weeks or in a 3-month term, combined with city and culture tours, languages and other courses.
